Eating healthy can be a challenge while traveling for the holidays. While on the road with kids, we like to plan ahead packing breakfasts and lunches not only for healthy options but to save money as well. What sort of foods do we travel with? In our cooler, we place fresh veggies, fruits, deli meat, cheese and yogurt. In our dry goods bag we pack nuts, snacks for the kids, sugar-free cookies and healthy options for the grown ups. For dinners, we stop by a local grocery store for a rotisserie chicken with veggies or sweet potatoes (if they have any prepared). One of our on the road cookies are Almond Joy Cookies from My Montana Kitchen. Our menu for this week:
Tuesday: Wonder Fish Tacos (S) Page 172 from The Trim Healthy Mama Cookbook
Wednesday:Trim Mac Salad (S) Page 181 from The Trim Healthy Cookbook
Friday: Perfect Pizza
Saturday: Rotisserie Chicken with Veggies and Sweet Potatoes
Sunday: Dinner with Family
Have a most wonderful week and if you are starting your holiday adventures, safe travels!
